A man of three kingdoms, Korean chef Pierre Sang is setting his rules in Paris. He created 3 ventures on the same road, each one a different chef's dream. We visited his fine dining option on a fully packed, Sunday night.
The unassuming venue features its 14 seats at the back of the restaurant and its kitchen in the front.
We had the only option, a surprise 6 course menu, and a kid's plate. The game of figuring out what was what, had kept us alert all night! At first a squid dish in Korean broth, tuna with truffle, egg and fish eggs emulsion and a soy with lemon sauce, then John Dory with artichoke, and poultry three ways, with sweet potato pure, squash pickle, and a sushi with liver marinated in wine and sea urchin. The poultry which is marinated with sea urchin under its skin was brought for a viewing during the meal. A brie foam with a spicy mango at the bottom and a chocolate with grapefruit dessert ended the experience...
