Allan Poulsen is a talented and ambitious young chef with awards on his belt. He is not shy on taking on new challenges such as Nimb's Louise (formerly Herman), in Copenhagen back in 2012. And he did prove that he can take on any platform and perform just fine.
Back at Louise he was running a smooth kitchen; open to the public for viewing, with no storms. The menu was not very long but a lot of the items featured, showcased his high level of skill with their refinement and detail.
Allan's friendliness and sincerity is obvious when you talk to him as he spares his time for chatty guests.
